Burgundy Chablis ham!
Jambon
JAMBON A LA CHABLISIENNE
(ham in Chablis Wine)
For 4 people
8 slices of best quality ham
60 cl of Chablis Wine
2 grey shallots
the leafs from 2 branches of tarragon
a teaspoon of tomato-purée
salt & pepper
½ litre of cream
a soup spoon of cornflour
Simmer the wine with the shallots and the tarragon to reduce it. Add the cream and when the mixture boils add the tomato-purée, the salt and the pepper.
Add the cornflour diluted in some water
Warm rapidly the ham by steaming it
Place the ham on large plates with the sauce
Rice is perfect to be served as an accompaniment
What to drink ? A glass of Chablis of Course
